ENDO Recipe: Rise and Smile Potato Bowl
Laughter is how we express ourselves. Conversation is how we connect with each other. Questions are how we intrigue our minds to think outside the box. Questions can make or break a conversation. It can open or close the door to relationships with people. The famous question you should avoid, is never ask a woman “when is your due date”? I use to laugh at that question because in my eyes its pretty obvious what a pregnant woman looks like vs does not look like. Until one day I was asked that question; I was taken back- how could I look pregnant? I work out, I’m petite, my clothes are still 00 and XS and I still have my cycle?? How can someone say that to me! Then I looked in the mirror paranoid about what someone told me. Only to see a reflection with not only me in mirror but a belly too.
You see, I have Stage IV Endometriosis. There are good days and bad days but the BLOATING IS REAL! The PAIN IS REAL! There are days when I just don’t have the energy to move, or the days when I move like speed but that’s the reality I live. What keeps me going is being a Nurse. As a Nurse, I have learned that my diagnosis is not a life sentence and that I am 1 out of 10 Women living with this. I am a care giver who encourages others and wants to make a difference. There is that famous saying “ you are what you eat”; I’ve educated my patients to make lifestyle modifications but it wasn’t until 4 years ago when I used my own advice to change my life for the better. I eliminated certain foods from my diet, made it fun, budget friendly, cultural, and meal prepped.
Let’s start with the Breakfast Bowl, sounds expensive but sometimes can cost less depending on what is in your fridge/pantry and where you shop (total cost $15 but can last 5 meals which cost $3/meal). I love making the breakfast bowl because as a Nurse who is on the go, having a healthy go to breakfast makes life easier. Simply set aside time to pre-make the potatoes so that when you’re ready all you need to do is add an egg, chai seeds (seeds/nuts to your liking) and sliced avocado!
Yields: 4-6 servings
Ingredients
½ lb. - 1 lb. of Red Potatoes ( or Sweet Potatoes)
1 Zucchini
1 Yellow Squash
½ Medium Onion
¼ cup Fresh Mushrooms
1 Red Bell Pepper
1 Can Pinto Beans
1 Avocado
1 Lime
1 Egg
1 tbsp Hemp Seeds/ Pumpkin/ Chai/ Sunflower (select seed of your choice)
Season with Salt and Pepper as well as Garlic Parsley to taste
Olive Oil
Directions:
Pre-Heat oven to 425 Degrees
Lightly peel potatoes (still leave some skin on it, but just enough) and cut into small pieces
Toss is Olive Oil and lightly season to taste ( salt & pepper and garlic parsley)
Using a baking pan, line it with parchment paper with add the seasoned potatoes to the pan
Bake for 20 min (check occasionally on potatoes; stir)
While the potatoes are baking, cut up the remaining ingredients to small pieces:
Zucchini
Yellow squash
Red Bell Pepper
Onion
Mushroom
Add to a medium/large mixing bowl
Open, drain and rinse Pinto Beans and add to remaining Veggies
Toss veggies lightly in olive oil and lightly season to taste
Squeeze half of lime on veggies
Lightly spray a Cast Iron Skillet with Olive Oil Spray/ grease with Olive Oil
Add veggies and to oven for 10-15 minutes
Combine Veggies and Potatoes for 5-10 minutes (check occasionally to ensure it is cooked) and remove from oven
As the Potatoes and Veggies are cooling; Fry an egg
Slice the Avocado
To plate:
Potato and Veggies (bottom)
Sliced Avocado (middle)
Fried Egg (Top)
Sprinkle Seed(s) of your choice on top
